2021 Wine Barrel tasting notes
The 2021 vintage delivered a respectable crop size and exemplary quality in our Shiraz blocks. With near perfect ripening conditions with mild temperature and cool nights the vines thrived.
For those who have thought about a barrel in the past or those who have hesitated on getting the full barrel this is the vintage to take the leap!
A nice 24-hour cold soak to begin extraction was implemented this year to enhance red fruit character extraction prior to a generous 7-day cool ferment allowing for the depth of flavour to develop with a complex extraction of flavours.
Like in 2020 we matured the wine a small portion of new American oak as the fruit quality was deserving and really looking for the palate weight this would offer. Remaining wine was in 2–4-year-old French and American oak 300L Hogsheads.
A rich juicy boysenberry nose with dried herb complexity and a hint of archetypal chocolate rounding out the full length of the palate with luxurious fine grain tannins to finish. Again like 2020 the small lick of new American oak adds precision to the palate weight.
As always, we will get this back to barrel for a further 4 months, for the magic of time to continue.
This wine should be enjoyed now to 8 years of cellaring.
