Name
Our Sauvage ‘meaning wild’ Sauvignon Blanc derives its name from the winemakers minimal intervention approach to demonstrate a wine of purity.
Vineyard
This vineyard is still in the wonderful GI of McLaren Vale, however it is located on the foot hills where it is considerably cooler than the main valley. This allows us to maintain a high natural acidity in the wine.
Winery
The fruit is kept as fresh as possible by being harvested in the cool of the night before immediate processing through the crusher, followed by immediate pressing. From there the wine is cold settled before inoculating.

Nose
Beautiful fresh flower aromas are concentrated with tropical fruit overtones of passionfruit and pineapple.
Palate
The palate is driven by a beautiful natural acid line with the perceived sweetness of the fruit salad like flavours rounding off the finish.
Winemaker
This is a fantastic display of McLaren Vale diversity. The site selection for growing this Sauvignon Blanc has allowed us to produce not just another Herbaceous/ Grassy Sauv Blanc but one with some great tropical character influence and a slightly fuller more rounded palate.
Potential
Enjoy this wine while young and fresh.
