Winemaking:
A single vineyard, old vine Shiraz this fruit demanded attention from day one. It demonstrated the epitome of McLaren Vale and with that we had to be respectful.
Picked in the cool of the night the fruit was chilled to 12 degrees to begin a slow extraction of the intense colour the berries displayed. Flavour was abundant, but we wanted to capture the intensity of colour to resonate that flavour without over extracting tannins. Objective achieved.
After a 10-day primary fermentation the larger format 500L Puncheons and 300L Hogsheads allowed for a great combination of oak uptake by the wine during an 18-month maturation. The fruit held it itself beautifully and the executions was deliberate and divine.
An abundance of primary fruit wraps up the classic spices and subtle complexities that are continuing to develop from the use of both new French and new American, fine grain, Medium toast oak. Depth of flavour is World class and the length of flavour is distinguished and addictive.
